Buffalo Chicken Bowls

Even though you don’t really have to cook this meal, it’s still one of my weeknight cooking favs.  Especially if you aren’t in the mood to cook and want a clean no carb meal 🙋🏻.  It’s packed with veggies and protein, and is super healthy.  It’s a little veggie chopping and some mixing and then some stuffing in your mouthing (another made up word).  Go whoop this up for a family friendly, super easy weeknight meal!

Buffalo Chicken Bowls

Serves: 4 Cooking Time: 20 minutes

Ingredients

  • 1 can corn
  • 1 can black beans
  • 2 Avocados
  • a pint of cherry tomatoes, halved
  • 1 Rotisserie Chicken
  • 3/4 Cup of cheese
  • 1 cup of your favorite buffalo sauce (I use Franks)
  • 1 Tbsp garlic, minced
  • Ranch Dressing

Instructions

Take all of the meat off of the rotisserie chicken and chop up and mix with the buffalo sauce in a bowl

In a separate bowl mix the drained corn, drained black beans, chopped cherry tomatoes, cheese and avocados

Add the chicken mix to the veggies and mix until combined

Portion everyone a bowl and drizzle some ranch dressing on top. Eat up!
