Green Chile Jack Chicken

I feel awful I haven’t blogged in what seems like weeks!  I’m back though and ready to get you all cookin.  Work has been nuts, we are growing, hiring, and I’m a busy bee all day.  I feel all of he busy women, single dads, and moms out there that are exhausted when they get home at night and still have to figure out dinner.  That’s why I wanted this blog, to help you all make yummy food that’s easy and quick 😃🍴.

This recipe is one of my all time favorites.  It’s easy, quick, and so damn good!  I hope you enjoy it too, let me know what you think!

STEP ONE: dip station

STEP TWO: layer the green chile and cheese

STEP THREE: roll the chicken and dip in eggs and then cover in panko

Green Chile Jack Chicken

Serves: 4-6 Cooking Time: 30 minutes

Ingredients

  • 3 Chicken breasts
  • 2 Eggs
  • 2 Cups of Panko
  • Salt and Pepper
  • Whole green chiles
  • Pepper jack cheese
  • 1/2 Cup Butter

Instructions

Preheat the oven to 375 degrees

Slice the chicken breasts longwise in half. Put each half in between two pieces of Saran Wrap and pound lightly until very thin

Salt and pepper the pounded chicken pieces

Put a whole green Chile and a thick (1/4 inch) piece of pepper jack cheese in the center and roll tight

Beat two eggs in a bowl and put Panko in another bowl

Roll the chicken rolls carefully in the egg and then in the panko. Cover the chicken heavily in the panko

Put all pieces of chicken on a cookie sheet

Melt the butter and drizzle it over all of the pieces of chicken and salt and pepper the tops

Bake the chicken at 375 for 25 minutes or until cooked through and tops are slightly browned
