I loooove s’mores. I love marshmallows, graham crackers, and of course chocolate. So what happens when you make them into a soft tasty cookie together? Magic! Go make em and pretend summer is here. Minus the bikini bod.
S’mores CookiesPrint Recipe
- 1/2 cup (1 stick) butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/3 cups flour
- 3/4 cup graham cracker crumbs
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup Hershey Mini Kiss Milk Chocolate Chips (or regular milk chocolate chips)
- 1 cup Jet Puffed Mallow Bits (Or mini marshmallows)
Preheat oven to 350 degrees. Line a cookie sheet with parchment paper or use a silpat liner.
In the bowl of a stand mixer cream together butter, brown sugar, and sugar until it is light and fluffy, about 2 minutes. Add in the egg and vanilla and mix until incorporated.
In a separate small mixing bowl, add the graham cracker crumbs, flour, baking powder, and salt and whisk together. Slowly add the dry ingredients to the wet and mix on low until it is combined.
Fold in the chocolate chips and marshmallow bits.
Chill for an hour if possible.
Scoop a heaping tablespoon of dough onto the cookie sheet. Bake for 9-11 minutes.
Cookies will not spread much but the edges will be a light golden brown and the middle should still look a bit underdone. Always undertake your cookies!
