Crispy Enchilada Burritos

This recipe is so delicious and so easy. Anyone can make it, and make it quickly when you don’t really feel like cooking! Who doesn’t love Mexican food? It’s got a beef filling, enchilada sauce on the inside and the outside and the burritos themselves are baked to a crispy finish so they don’t get soggy. Just a tasty little 30 minute I’m exhausted Monday night meal ✌🏻😃🍴🌯. Eat up!

Crispy Enchilada Burritos

Serves: 4 Cooking Time: 30 minutes

Ingredients

  • 1/4 cup Onion
  • 8-10 Ounces of Ground Beef or Buffalo
  • 1- 28 Ounce Can of Enchilada Sauce
  • 1 Tbsp Chile Powder
  • 1- Cup of Cheddar Cheese
  • 4-6 Wrap size Tortillas
  • 3 Tbsp Chopped Cilantro
  • 1- 16 Ounce can of Black Beans
  • Pam spray

Instructions

Preheat oven to 425 degrees

On the stove, Sauté chopped onion in a little olive oil over medium high heat

Add beef/buffalo and cook until browned

Salt and pepper to taste

Add 1 tablespoon of chile powder and 1 cup of Enchilada sauce to the pan

Add beans and cook 5-7 minutes

Take off heat and mix in fresh cilantro

Add about 3/4 cup of the meat mixture into the middle of the tortilla and sprinkle with cheese

Roll the sides in carefully and then roll the tortilla forward to seal

Put seam side down in a baking dish or pan and do remaining 3-5 burritos

Spray all of the burritos with cooking spray and bake at 425 for ten minutes. They should be golden brown and crispy, not burnt!

Take the pan out of the oven and spoon some Enchilada sauce onto each burrito

Sprinkle with cheese and broil for 1-2 minutes until cheese bubbles
