Acai Bowls

Travis introduced me to acai bowls.  I was like really?  Like it’s a smoothie you eat in a bowl?  Yep, that is indeed what it is, and boy is it fantastic!  Not only that but it has several superfoods in it, which I try to eat lots of everyday….you should see the smoothie we drink every morning!  It’s something we eat a lot more of in the warmer months but it’s good year round really.  I married a major California boy and this breakfast transports us back to Huntington Beach year round even though we only go every July 😃.

Huntington Beach Acai Bowls

Serves: 2 Cooking Time: 15 Min

Ingredients

  • 1 Packet of Acai Puree (Found in healthfood frozen section)
  • 1 Banana
  • 1 cup Vanilla or Unflavored Yogurt
  • 6-8 frozen strawberries
  • Frozen Mango, chopped
  • Frozen Blackberries
  • Shaved Coconut
  • 1/2 cup Coconut Water or almond milk

Instructions

Take shaved coconut and place on baking sheet

Roast shaved coconut for 5 minutes, don't let it burn

While coconut is roasting, place 1 packet of Acai puree, banana, strawberries, coconut water or milk and 1 cup of yogurt into your blender

Blend until smooth

Pour Acai mix into bowl and top with frozen mango, frozen blackberries and shaved coconut

Notes

Hold the acai packet under hot running water for 30 seconds to defrost it a little before adding to the blender. I like adding granola too! Protein too! Then pretend you're at the beach.....
