I love Mediterranean food. There’s a reason they are so damn skinny over there. These wraps are so healthy, easy to throw together and everyone loves them. They have an interesting flavor to them, healthy hummus spread, feta cheese and spicy rubbed chicken! Travis and I used to have them weekly, and I’ve made them for the family and guests alike. Mediterranean Chicken Wraps

- For the chicken and marinade:
- A splash of hot pepper juice from a jar of pickled banana pepper rings
- 1/4 Cup olive oil
- 1 Large cloves garlic, chopped
- Zest of 1 lemon
- 1 tsp chili flakes
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp granulated onion
- 2 Tbsp thyme, chopped
- 1 Tbsp sesame seeds
- Salt and pepper
- 4 boneless, skinless chicken breasts, pounded thin
- Low carb wraps
- Red onion
- Tomato
- Feta cheese
Instructions
Combine the pickled pepper juice with the olive oil, garlic, lemon zest, chili flakes, cumin, coriander, onion, thyme, sesame seeds, salt and pepper. Turn the chicken in the marinade and let stand for about 30-50 minutes while you pre-heat the grill, griddle pan or outdoor grill to medium-high heat.
Cook the chicken with all of the spices rubbed on it until cooked through
Cut the cooked chicken into strips
Spread each wrap with hummus
Then top with chicken, feta, red onions, and banana peppers
