Avocado and Egg Burritos

We’ve really gotten into wraps lately.  We eat really low carb during the week, so having just one night a week with a small carb (you can use low carb wraps or tortillas) is a nice break.  Plus with my crazy 80 hour weeks at work, coming home to make an easy meal is always nice too.  Back to these breakfasty (new word) wraps….just scramble some eggs, throw some hot sauce or salsa and a fresh avocado in these babies and your day will be made!  I make these often with leftover wraps or tortillas on Saturday mornings after I get home from boxing.

Avocado and Egg Breakfast Burritos

Serves: 2 Cooking Time: 20 Min

Ingredients

  • 5- eggs
  • Hot sauce or salsa
  • Cheese
  • Wraps or tortillas
  • Avocado

Instructions

Scramble your eggs over medium heat. Add the cheese and hot sauce or salsa and heat until melted.

Zap your wraps or tortillas in the microwave for 15 seconds

Peel and cube your avocado.

Lay egg mixture and a few pieces of the avocado in the middle of the wrap.

Fold the sides in while rolling the wrap closed tight without letting it crack!

Resume your day fueled with a happy tummy
