Artichoke Crusted Chicken

You can find me most nights exhausted on the couch, covered in three dogs, blankets, and perusing Pinterest for hours on end.  This is a recipe I found on there and I absolutely loved it!  It’s yet another 30 minute meal, and if you love artichokes than you’ve met your match.

This recipe is so easy and is great for a healthy low carb weeknight meal.  I’d rather eat pasta every night, but when you work long hours at an office job all day everyday and you pass 30 years old, you don’t get to eat carbs and be a size two anymore.  So then I had to get damn creative and figure out lots of meal ideas that are lean proteins and veggies.  Now it’s easy,  5 years later you all can just copycat now 😃🍴.

Artichoke Crusted Chicken

Serves: 4 Cooking Time: 30 minutes

Ingredients

  • INGREDIENTS
  • 4 six-ounce chicken breasts, pounded thin
  • 2 tbsp olive oil
  • 1/4 cup mayonnaise
  • 1/4 cup artichoke hearts, drained and chopped (I used canned artichoke hearts, but frozen ones that have been thawed would be fine)
  • 1/3 cup grated white cheddar cheese
  • Salt
  • Pepper

Salt and pepper the chicken and then sauté each chicken breast in 1 tbsp olive oil on medium-high heat, for about 8-10 minutes, flipping once, or until the juices run clear when pierced with a fork. Set aside.

Mix together the mayonnaise, artichoke hearts and cheddar cheese until evenly distributed. Spread the mixture over the sauteed chicken breasts, and then broil at 400 degrees for about 3 minutes. Do not take your eyes off them — broiling can lead to burning faster than you can imagine. When the cheese is melted and bubbling and the tops are golden, remove and serve.
